I love french fries they taste awesome,but buying them regularly from restaurant seems expensive for me.So I asked my mom to cook,she told me she haven’t tried before but will make an attempt,on that evening when I was chatting with my friend the smell from kitchen caught my attention,I feel like I am in a restaurant.I rush to see how it is done,but to my disappointment its already done.It smells great but it doesn’t taste like the one I ate from the restaurant recently.I return back to my laptop with oily hands and my buddy online was screaming “where are you”.
The next day I search french fries recipe in google but they never explained the “crispiness” factor ,Later i found the below clip from videojug about making french fries.But they too miss the important factor in making crispier french fries,thanks to Mohan kumar who used to be the restaurant chip fryer when he was a kid.According to him to make perfect french fries.
“Remove starch by soaking in cold water. When cooking first blanch at the lower temperature for a few mins to soften and just leave them draining in the basket above the fryer while waiting for the oil to get nice and hot. Fry for two mins. Perfect crispy chips, fluffy inside.“
